I've experimented with many types of breads, from all whole wheat to mixtures of whole wheat flour and white flour, but this recipe below is about the best. Dissolve 2 packs of yeast in 2 cups of lukewarm water and add the following ingredients:
Knead this mixture for about 15 minutes and then cover with a towel and let rise for about 2 hours in a nice warm spot until it has doubled. Divide the dough in two and form into 2 loaves and place into bread baking pans. Let rise for about an hour in a warm spot. Heat oven to 350 degrees F, and bake for 35 minutes One trick I have learned to avoid getting a real crusty top on the bread, is to place a cookie sheet or pizza stone on the top rack of the oven and place the bread on the lower rack under it. The cookie sheet or stone will provide a more even heat distribution and will prevent the top from getting baked too much. |
