Tofu Burgers

I'm not a vegetarian, but I try to limit the amount of fatty meat I eat. I love hamburgers and this recipe is a good substitute that is low in calories, low fat, and high fiber.

Combine the following ingredients and mix well:

  • 1 lb tofu
  • 1/4 cup soy flour
  • 2 TBS whole wheat flour
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp ginger powder
  • 3 TBS soy sauce
  • 1 cup finely chopped onions
  • 1 egg
  • 1 1/2 cups rolled oats
  • 1/2 cup finely grated carrots
  • 1 TBS mustard

Form into patties and bake on low heat(about 250 degrees F) in oven. Depending on how thick you make them, they may bake for 2 hours or so. You can also fry these up in a pan. I usually make up a triple batch, bake them all and then freeze them.
